corn tortillas {my gateway drug}




Going grain free was easy for me, until it wasn't.  Last week I started really craving chicken enchiladas.  Specifically the Chuy's Special (stacked blue corn tortillas, chicken, and tomatillo sauce).  John and I counted it up, I've been ordering the Chuy's Special for 20 years now.  20 YEARS!!! (When I shared this with a friend, she said "what are you, 80?) We have had a long standing relationship, and I just couldn't quit them.  So we went and I ate.  And you know what?  I felt fine the next day!  Great even!  Lots of energy still, no stomach issues, nothing!

The next day we had a movie marathon at church for our teenagers.  Maybe I ate 3 homemade oatmeal cookies.  Maybe I didn't.  You'll never know for sure.  And later that evening I had dinner with a sweet couple that served a pasta dish.  Pasta doesn't really do it for me, but I did not want to offend my hosts, so I ate.  And you know what?  The next day I felt it.  Lower energy, and my legs hurt.   Over the past few years my legs have ached on and off at night.  Just recently I began suspecting that it could be tied to my digestive system.  The two weeks that I was completely off grains, they didn't hurt at all!  Hmm...

Then there was today.  After church we were itching to go look at some land, so we decided for a quick lunch at the bakery in town.  I didn't realize that there wouldn't be any grain free option on the menu, so I just went for it.  I ordered a sandwich on sour dough.  Oh, the stomach cramping that ensued!  I was in so much pain I could hardly walk!  Still, sitting here, my stomach feels so bloated and crampy.

Lessons learned, not all grain makes me feel horrible.  Corn tortillas (in moderation, blah, blah, blah) don't do me wrong (thank you Jesus!).  Too many wheat products in a week, bad idea.  For now I'm sticking to wheat free eating, but enchiladas are back on the menu!

Ugh...I feel you.

Corn tortillas are a bit of a staple around here - which I think is too much for our bellies. Trying to back away. :)
