summer is for fishing and salad



The kids had so much fun fishing with their granddad and daddy yesterday!  They didn't catch anything, but John said they were really patient and gave it true effort!



And since summer is more about doing fun stuff like fishing, and less about heating up the kitchen, we have been eating lots of salads around here!  Here is my bean salad recipe (as Buddy says "tastes just like Jason's Jelly" that's Jason's Deli for those of you that don't speak Buddy).



3 bean salad (based on a recipe from Mary Jane's Farm magazine)

1 C black beans (or one can, drained and rinsed)
1 C garbanzo beans (or one can, drained and rinsed)
1 C kidney beans (or one can, drained and rinsed)
1 bell pepper diced
1/2 of an onion diced
1/2 C cilantro, chopped (optional)
1/3 C apple cider vinegar
2 Tbsp honey
1/4 C olive oil
1 1/2 tsp salt
1 tsp pepper
1/2 t ground cumin

1.  mix beans, peppers, onion, and cilantro in a large bowl
2.  whisk together the ACV, honey, oil, salt, pepper and cumin to make a dressing
3.  spoon dressing over the beans and gently stir
4.  let sit in the refrigerator for several hours before serving.  best served the next day.

This is so good!  I like to serve with some cornbread and watermelon.  Sounds like dinner to me!

I'm always wanting to thing of quick yummy cold things to eat while we're out all day swimming our riding bikes (and NOT cooking much.)

Hey lady, this is completely off topic but I thought you would have the answer. Someone recommended that I bring colloidal silver with me to Haiti in case I have any "issues". Last year I spent my return flight in the airplane restroom and ended up with a funky rash that turned out to be staph. Talk about bonus souvenirs :) I've read a little about CS but am not too sure.
They said I could use it for skin rashes and stomach problems. What do you think?

I have been searching for a three bean salad as good as Jason's and I will look no more. I used the edamame like they do instead of the black beans and this was delicious! Thanks for the great recipe!
